Single Malt whisky is one of the most revered spirits in the world. It is exclusively made from barley, which is quite a cheap product. A bottle of The Macallan 1926 60-year-old recently sold for $1,512,000 in auction, marking the largest single sale ever for a bottle. Over the past 50 years, single malts have become increasingly popular. Scottish single malt exports grew by 14.2% in 2017 to reach nearly $1.5 billion. Glenfiddich distillery in Scotland is the world's largest exporter of single malt. Started in Dufftown in 1886, it ships 1.2 million 9-liter cases each year. Making single malt is a difficult and lengthy process. Barley is ground down and added to spring water. Heated to 64°C, it turns to sugar, dissolving into a fine sweet, tangy liquid called wort. The wort is drained, cooled, and passed into wash-backs. This is heated and condensed in copper wash stills for its first distillation, and a second time in spirit stills. This spirit trickles into the spirit safe, ready for maturation, and then is batched in casks with spring water. Casks spend years in the warehouse, maturing into a single malt. An aged 30-year maturation can have 30% to 40% of the alcohol evaporated in the barrel, or over 1% each year of the whisky’s life. This is because of "Angel's Share" — the natural evaporation of the liquid into the atmosphere over time. So older whiskies are expensive not because they’re old, but because they are rare. Fashion, and the collector's market, also have something to do with the rise in popularity. Christie's Director of Wine Tim Tiptree oversaw the sale in 2018 of The Macallan 1926 60-Year-Old, which sold for $1,512,000 to a private buyer. According to Tim, the collector's market will continue to grow. India, China, and Japan, are now main players in the single malt market. Particularly successful is the Yamazaki distillery in Osaka prefecture. Rare whiskies from their collection of single malts now sell for thousands of dollars. We tried a 12 year-old single malt worth $36, and the 50 year-old bottle worth $30,000. There are no longer any independent distilleries in Ireland, but there are a bunch of smaller brands that are very interesting. Most people when they think Irish whiskey, they're going to think straight-forward Protestant/Catholic. None of that really matters. Actually, an interesting fact is that your two most popular Irish whiskies actually share malt between the two of them. They have roughly the same proportion of one another's barley from North and South Ireland in the same mash. You have smaller producers that are buying up the juice, and they're doing interesting things to it. We have some peated Irish whiskies. You have some strongly vintage Irish whiskies. Generally, you're going to get softer, rounder notes from your Irish whiskey. You get a lot of caramel, not a lot of heat. It really is a drinking whiskey. It doesn't have to be St. Patrick's Day, because St. Patrick's Day is awful, and nobody cares about snakes. Irish whiskey, it's a richer, softer, it's an every man's whiskey in a lot of ways. Company founded in 1818. Produced in Scotland. Single Malt (Lowland). 80 proof. A Beam-Suntory brand. McClelland's offers a range of four private label whiskies. While these are single malts rather than whisky blends, they are not released as distillery bottlings. Instead, they are simply labeled as representatives of four major regions: Lowland, Highland, Speyside and Islay. The company, T&A McClelland's, got its start in 1818 as a whisky blender and exporter. Over 150 years later, they were purchased by Morrison Bowmore Distillers, and in 1986 the McClelland's Single Malt range was launched using one distillery from the new owner's portfolio for each region. Initially, only the Lowland, Highland and Islay whiskies were offered, but the line was so successful the Speyside bottling was added in 1999. Most recently, an older version of the Speyside malt was released in 2008, with the age listed as 12 years old. The core line of four whiskies are all younger, bottled at 5 years old, and do not specify the age on the label. McClelland's has the fifth highest sales in the US by volume.

Water is another major ingredient in the making of single malts and we utilize the pure underground table of water along with rain-fed water sources. Copper pot-stills made in India, were specially designed with long necks to create fruitier spirits. Double-distillation in these pot-stills prolong intimate contact with the copper and this renders a distinct, rich and full-bodied flavour to the new-make spirit, which is then matured in carefully selected American white oak barrels. During maturation the oak imparts diverse natural colours from sparkling copper, rich amber to dark mahogany as well as distinct flavours such as spices, marmalade, chocolate, coconut, dry fruit, vanilla and honey to the whisky that continues to evolve. The ideal warm weather of coastal Goa helps our whiskies mature faster, unlike those produced in colder climes. Every step of the process, from germination to malting and peating, enhances the distinct smokiness of our whiskies, while the non-chill filtering helps retain the original colour and taste. A conscious decision was taken to create high quality single malts at affordable prices allowing us to introduce many more to the flavorful taste of single malts. MB: Well the biggest one for us when we talk about varieties, we have to talk about the 12 year old. The 12 year old is very widely available, it's actually the most awarded single malt whisky in the world. The one that is starting to get widely available for us is the 15 year old. It's available in a lot of bars and stores now. We also have an 18 year old, a 21, 30, 40 and one that is definitely not widely available is the 50 year old. We only had 6 bottles of this come into the US this year. Quite an amazing one with the 50 year old, we released it in 2009 and 50 bottles will be released every year world wide. So they will be going to specific markets around the world. All in, there will be 500 bottles released, everything about the 50 year old is about quality down to even the way the bottle is closed. Believe it or not the bottle is sealed tight by a world class fly fishermen who is an expert in knots. It's kind of crazy. The label is done in Sterling silver, hand engraved by a silver smith. The packaging that a Queen Warrants. The packaging is leather, hand stitched. The bottle itself is hand blow. So everything done on this bottle is done by hand and the attention to detail is unbelievable. The Liquid itself, I have been fortunate enough to taste it a couple of times now and it's amazing. I don't always talk about older scotch whisky being better, I tell people to find what they like and not to go off the number on the age statement but I don't know when it comes to the 50 year old. i think the only way to describe it would be... sublime. You think for being half a century old you are going to get wood and oak right away but you don't. You get some tropical sweet notes like mango, pinapple in the beginning. Bartenders don't like scotch whisky, at least according to a poll from Drinks International. Why do you think that might be?! Hamish Smith, editor of the Brands Report, said: ‘Our poll indicates that bartenders aren’t in love Scotch brands in the way they are with brands from other categories.’ Scotch has never had an easy relationship with cocktails. When the modern cocktail movement arrived, bartenders defaulted to classic recipes as the blueprint, which meant gin, rum, brandy and American whiskey. It took Scotch producers decades to react to this new opportunity – preferring, in many cases, to stick to the slightly pompous teaching that Scotch was too fine and precious to be mixed. The seemingly relentless drive to make age statement Scotch a luxury item, while passing off NAS malts or blends as “more mixable” is old thinking. The modern cocktail movement, like the elite chef world, doesn't compromise on ingredients or flavour. Drinks International surveyed 127 high-end bars from 38 countries around the world, with a high number of respondents from the US, England, Australia and Singapore. Smith said: 'If this report is anything it is a snapshot of the behaviours at the elite end of the bar business – not definitive, not absolute, but insightful nonetheless’.

Coming from the innovative and exciting Chichibu Distillery, Ichiro’s Malts never disappoint, and this Mizunara Wood Reserve is no different. The Brand Ichiro’s Malt is a small brand that is challenging the big boys, taking on brands like Suntory and Nikka, who are top of their game. The distillery at Chichibu was started by Ichiro Akuto, whose grandfather started the Hanyu Distillery and owned a sake brewery, which closed in 2000. But what may have been a set back for the family, later proved to be quite successful for Akuto, who took on the two pot stills and remaining casks of Whisky. Then in 2008, Akuto used the casks to set up Venture Whisky and sold what was left of the Whisky, some of it selling for record prices. Today, the brand are renowned for creating malts that are deeply complex and intriguing. Brand Ambassador Yumi Yoshikawa said in an interview with the Guardian, “If we were interested in just making balanced, easy-to-drink whiskies then we would inevitably have to compete with Suntory and Nikka, but we’re trying to do the opposite – making whiskies with character that are not necessarily balanced or easy to drink. That’s how we’re keeping our market share.” The Blend The brand’s Mizunara Wood Reserve is a perfect example of why the brand is so successful. This is a complex blend made from various single malts that have been vatted and matured in Mizunara casks, or Japanese oak. The nose opens with light floral notes and lots of honey. It is like walking through a Japanese zen garden, with blossom filled trees all around. Zesty citrus fruits and dew-covered grass are also there, adding a lovely refreshing note. The palate is bold and refined, with more honey and fresh orchard fruit. The honey lends a mellow and smooth mouth feel. There is a delicate spice as well, which adds a little bit of heat. More citrus fruits and floral notes appear, making it very well rounded. They play off each other and complement the sweetness of the honey. A little hint of malt comes through, with toasted grains giving a lovely biscuity note towards the end. The finish is strong and warming, with more spice and a little bit of fruit. This is a wonderfully complex malt, with an intriguing flavour profile. It showcases all of the reasons that Ichiro’s Malt does so well. Check out all things whisky on GreatDrams.com.
